We harvest Viognier by night, to retain freshness, and only use the first pressings of the juice to make this wine. It's a wine that works well with summer dishes, from salads to fish or a mixed cheese plate. Bon appetit!
Over the years our vineyards have extended and fragmented. Time has proven that some small islets systematically produce juices of higher quality than the others. We decided to isolate them and vinify them separately. We have chosen to present them under a combination of the name “Côte” and the number, which is the average altitude of the blocks (Côte 128, Côte 136, Côte 238).
Vinification & Aging: We select specific parcel and we harvest at night to preserve the aromatic potential of the berries. Fermentation at 16 - 17 ° in tanks and then we age the wine in stainless steels tanks and part of the wine in oak barrels (30% new and 50% old).
Tasting notes: This wine is delicatly perfumed with aromas of white flowers and peach. On the palate it is elegant with hints of apricot and orange blossom.“

Fruit from a single vineyard of Viognier grown on their Cazal Viel estate in the southern past of St-Chinian. This vineyard is on limestone soils, and gives lower yields. 20% barrel fermentation in French oak, 30% new. Only free-run and first-press juice.
There is a trace of oak spice on the nose and on the palate, but it's tucked well into the fruit and I don't think it will show in a year or two (which will be, I believe, the best time to drink this wine). Bold, bright apricot fruit, zigzagging with lime-fragrant acidity, develops into golden-Rainier-cherry intensity with a touch of peach stone and green almond. There is a gentle, subtle crescendo in the mouth as the silvery acidity weaves in and out through the flavours, drawing sweet-leaf vineyard herbs and a trace of soft but mouth-watering bitterness in its wake. Silky finish. GV (TC). 2024-2028."
