Notizen des Weinguts: | Winemakers: Martin Shaw and Adam Wadewitz Der M3 Chardonnay ist nach dem Weinberg in Adelaide Hills benannt worden, der mit Chardonnayklonen aus Burgund (hauptsächlich Bernard 95 und 76) bepflanzt ist. Der Name M3 kommt von drei Partnern: den Brüdern Michael und Matthew Hill Smith und dem Cousin Martin Shaw. Winemaker´s Comment: Aiming for elegance, restraint and the ability to age, acid is bright and there’s generosity of flavour. Typically it shows white flowers, citrus, and nectarine notes. The 2020 vintage was very low yielding, which resulted in great concentration. The cool ripening conditions produced Chardonnay with intense flavours and excellent balance. Vintage: The vintage threw up a number of challenges but the weather during the ripening period was extremely kind. February saw perfectly even ripening and resulted in grapes that were small, packed with flavour, and with higher than normal acidity. Source: From Piccadilly, Lobethal and our Lenswood Vineyard, at 455–500 metres elevation. Undulating with east and west facing aspects, the soils are brown loams over clay with broken shale on the ridges. The vineyard was planted in 1999. Winemaking: Die Lese erfolgt von Hand, maximal 2kg pro Rebstock. Die Trauben werden nach der Lese über 36 Stunden gekühlt und anschliessend als ganze Trauben direkt ins Fass gepresst. Die Fermentation erfolgt zu 90% "wild" in zu 30% neuen und 70% gebrauchten Fässern unterschiedlicher Größe. Der Jungwein bleibt einige Zeit auf den Hefen und wird von Hand gerührt (Bâtonnage). 50% des Weines durchliefen die malolaktische Fermentation. Der Wein reifte 9 Monate in französischen Barriques (Mix aus alt und neu): "Special care is taken not to over oak the wine, maintaining fruit integrity." Background: The Shaw + Smith winery was built in 2000 giving us the ability to whole-bunch press chilled grapes for the first time, and underpinning the evolution of style from that first M3 Chardonnay vintage in 2000 through to the present day. The most significant event since then came in 2012 with the purchase of the Lenswood vineyard. Ideal serving temperature: 10-12°C. Favourite Recipe: A luxurious match with kingfish ceviche. |
