Hauptsächlich Syrah mit ca. 5 % Grenache; auf kalkhaltigen Lehm-/Tonboden, Appellation Saint Chinian, sehr geringe Erträge von 26 hl/ha; nachhaltiger Weinbau; Lese in der Nacht um die Frische zu bewahren; rigorose Parzellenselektion; 100 % entrappt, temperaturkontrollierte Vergärung, langsame Reifung und Ausbau in neuen französischen Barriques für 18 Monate, minimales Filtrieren bei der Abfüllung. 15,5 % vol. Lagerpotential 15 Jahre (laut Weingut). Nur 2700 Flaschen produziert.
- Notizen des Weinguts: „Château Cazal Viel is home to an underground cavern with a precious spring. Local folklore tells of a group of fairies that inhabit the spring and guard its purity. Until the turn of the last century, the women of the local villages, Cessenon and Cazouls, met at the spring to wash their clothes and share village gossip. According to the legend, their vicious gossip mongering and bitter rivalry caused much sadness amongst the fairies and on occasion, the sound of fairies tears was heard.
Larmes des Fées means Tears of the Fairies. Although this wine isn’t actually made of tears from fairies but we believe they did have a part to play. You see, way back it is said that fairies lived in the cave near Cazal Viel. A spring ran right beside the cave and the washerwomen would use this spring to wash clothes. They often quarrelled, upsetting the lovely fairies, who would weep in sadness. These fairy tears ran down to the land that grew the vines that made this wine. With some help from us of course. First we destem the grapes before they ferment for 18 months in new French Oak barrels. This is the final chapter in the story and the ending doesn’t disappoint.
This is a robust wine that also has a delicate side. You’ll taste big red fruits and spices but you’ll also notice the delicate tannins that give it a long balanced finish. It stays with you and won’t be forgotten. Especially if the occasion also involves family and friends. It’s the best of our family brought to yours.
Firstly, it’s worth decanting for two to three hours before enjoying it, if you can wait that long. Enough time to make a family meal. Red meat brings out the best in it and vice versa. You can age it for up to 15 years but it’s unlikely you’ll wait that long. And you’ll probably be glad you didn’t.“
