Combining grapes from 25 batches, this confirms the wine's standing as one of the world's great stickies, with layers of orange blossom, jasmine, quince, marmalade and tarte tatin, 168 grams of residual sugar and remarkable freshness and palate length.“

- 97 Punkte VINOUS, Antonio Galloni: „The 2021 Vin de Constance comes from 27 different batches with two weeks on the skins. With 173.5 grams per liter of residual sugar (the same as 2020), it presents a very pure bouquet, effervescent with quince, orange zest and just a hint of marmalade—wonderfully delineated and focused. The palate is supremely well balanced with a viscous entry and extremely good weight in the mouth, but the acidity (6.3 grams per liter) keeps this on its toes. Quite spicy on the finish, this lingers long in the mouth, and I can still feel it 30 seconds after it has departed. There’s real freshness and electricity here. Outstanding.“

„The 2019 Vin de Constance is matured for 18 months in 500-liter Hungarian and French oak barrels, 50% new, followed ba another 18 months in oak foudres. The growing season saw more sunlight hours than previous vintages (2,998 compared to 2.588 in 2018 for example). It has an understated nose, almost Sauternes-like even i fit does not contain an ounce of botrytis. Subtle nutty aromas percolate through the wild honey and quince scents, wax resin and lanolin. The palate is medium-bodied and very pure. Disarmingly fine acidity, it is slightly Germanic towards the finish, with a hint of lemongrass lingering on the aftertaste. This is a superb Vin de Constance under the tenure of Matt Day that is a step closer to what you might confusingly call a non-sweet dessert wine.“

Pristine quality to the texture, lively and thrilling, this is a serious, opulent and powerful wine, more on the spiced, nuanced side with aspects of dried herbs, wood scents and bitter lemon and orange with a touch of honeyed lychee. It feels supremely complex and characterful. Sophisticated, layered and balanced with some minerality, a slight graphite edge all of which adds to the whole. It's still extremely youthful but there is real sculpting here, a sense of precision, style and freshness. Well crafted with an extremely long life ahead. A wonder, and one of the best from the estate!“

Intense, powerful nose of apricot, orange and white flowers. On the palate, rich and sweet with a touch of spice, but a very fine line of acidity keeping beautiful harmony. Very long. This will fill out with more vanilla creaminess from longer maturation.“

Certainly quite sweet, but not unctuous, with the natural, effortless acidity managing to balance the lushness. Intense, yet scented and naturally expressive. Persistent finish. You crave for a second glass if you drink it now, but you can also hold it for a decade in your cellar.“

Notizen des Weinguts: The 2021 harvest season was marked by patience and precision. Moderate weather during this period resulted in a later harvest than usual, characterized by cooler conditions, extended hang time, and optimal phenological ripening. These factors contributed to the development of exceptional fruit concentration, lower pH levels, and higher natural acidity. Despite the harvest being up to two weeks later than in previous years, the absence of rainfall or heatwaves allowed our harvest to span just three weeks.The post-harvest conditions of 2020 set the stage for an exceptional 2021 season. Warm weather and ample rainfall delayed leaf fall, allowing the vines to build up sufficient reserves for dormancy. This was followed by a colder, wetter winter that extended into spring, creating ideal conditions for the growth season. Tasting notes Bright light gold in appearance. The nose is layered with aromas of apricots, sandalwood spice & Seville marmalade. A crisp acidity and salinity, with flavours by flavours of nutmeg, citrus, jasmine flower and rose water. Creamy and rich, the palate is textured and complex with a delicate wood spice on the mid palate. The is a fine balance between sugar and acidity, creating a dryer style of Vin de Constance. Concentrated and lively, the wine concludes with a long pithy and almost bitter finish During the cooler and less sporadic 2021 season, we began harvesting the earlier-ripening components on March 9th. Over the following three weeks, we picked 25 different batches, ranging from lower sugar, and high acidity components to much sweeter, more concentrated final picks on March 30th. Interestingly, this approach mirrored the conditions and practices of the 2020 harvest. Each batch was processed separately, with most receiving only two weeks of skin contact before pressing. At this point, we blend various components to achieve the optimal balance of sugar, acidity, and alcohol, allowing fermentation to stop naturally. The wine was then aged for 18 months in 50% new 500L Hungarian and French oak barrels, followed by an additional 16 months in a large format wooden foudre. The combination of residual sugar and alcohol levels has a well known preservative effect on bottled wine. This wine is capable of ageing for many decades if not generations from release. Ideal serving temperature is 12°-14° Celsius
