|Notizen des Weinguts:||Winemaker´s Comment: The Merlot grapes were harvested on two separate occasions with one week separating the picks. The idea was to harvest one parcel a bit riper than the other. This would provide more belnding options for us. Fruit was destemmed only (not crushed) with whole berries transferred into open fermenters. Ferment took place with 2 pump overs per day and after day 4 a proportion of the juice was drained, completing fermentation in oak barrels. After 8 days fermenting on skins the wine was drained to tank and the skins pressed in basket presses to tank. Transferred to barrel the following day, the wine completed Malolactic fermentation in oak and remained in barrel for a further 16 months before emptying and being prepared for bottling. Vintage: No rain fell until mid March giving us ideal conditions to conduct the Vintage. It was warm and dry. Yields were up a little on the previous two harvests which was also very welcome. For the first time Merlot ripened earlier and was harvested before Shiraz, probably relating to the lack of vigour on the Merlot vines. The dry conditions meant less vigour and more fruit exposure to the sunlight. We feel this also lead to deeper colour and more ripe fruit character in the Merlot juice.
