Alcoholic Degree : 16% Volume

Varieties : A mixture of Grenache Noirs, Grenache gris & Carignan 

Vinification : The harvested grapes are initially partly split and then subjected to ?mutage sur grains? 

Élevage : The wine spends one year in ?bonbonnes? as part of the maturing process before being further aged in oak barrels  for 4 to 5 more years. This is an ageing process based on oxidation, which seals the characteristic of each vintage. ?Reserva? is a traditional Banyuls. 

 

TASTING & CHARACTERISTICS

Being midway between fruity & grilled, it affirms characteristic of oxidation: prunes, coffee, Moka. It is a classic accompaniment for desserts of dark chocolate, but also perfect with blue cheeses (Fourme d?Ambert, Bleu d?Auvergne, Roquefort , Gorgonzola or the King of British cheeses ? a good Stilton). All flavours ?conspire? to make it sing : dried or grilled fruit, cinnamon, fig, bitter orange, almonds?

ORIGINS OF BANYULS

?Banyuls? wines are great dessert wines and also found as aperitifs throughout France. For centuries, these ?Vins Doux Naturels? (VDN) have been made from vines growing on the steep slopes that plunge into the Mediterranean between Collioure & Cerbere to the Spanish frontier. The wines are made from the traditional local well-adapted varieties of Grenaches and Carignan but the sparse conditions lead to a poor yield with a maximum of 30 hectolitres per hectare. ?Banyuls? belong to the large family of ?vins de liqueurs? and thus similar to Maury, Muscat de Rivesaltes, Rasteau, Port & Madeira.

ELABORATION

?Banyuls? is said to be a ?fortified? wine, which is to say, that its fermentation is arrested by the addition of distilled pure alcohol (between 5 to 10% by volume). This procedure ?Mutage? permits the retention of a small amount of the natural grape sugar (regulations prevent any further addition) and finally the wine settles with a final alcohol level of about 16?. This is a sweet, smooth and genial wine, which during the ageing process in oak barrels and being left open to the elements in bonbonnes (demijohns), can acquire beautiful shades of amber and terracotta.
